Arroz con Vegetales y Pejiballe Citrus Salsa / Rice with Vegetables and Red Palm Fruit Citrus Sauce

Working on new menu items for the restaurant.  Its the height of Palm Fruit season so I wanted to create something special using this amazing fruit.  Red Palm Fruit when boiled with water and salt, has the texture of a yam and the most amazing sweet, savory flavor.   Rice is a staple in the Costa Rican diet and all the vegetables were locally sourced.  I used broccoli, carrots, peppers, mushrooms and scallions sauteed in a little olive oil, wine and seasonings.
